Élevage du Bon Poussin-Elchinger Auguste is a family business founded in 1945 by Auguste Elchinger, Frédéric’s grandfather, who is the fourth generation to carry on the tradition. Together with his wife, Peggy, Frédéric is one of the few goose farmers in Alsace. The couple force-feeds about 1,000 geese and 3,500 ducks each year, feeding them local corn and raising them in pens. Specializing in foie gras, homemade prepared dishes, and poultry products, Elchinger Auguste is committed to authenticity and originality in an industry where standardization seems ubiquitous. Free of additives and preservatives, their homemade products are a tribute to tradition: terrines, pâtés, and sausages made exclusively from poultry, duck shepherd’s pie, duck lasagna, and poultry pies marinated in Riesling from Boehler Molsheim, among others. The company sells its delicious products primarily at weekly markets in northern Alsace (a list of markets and days of operation is available on Facebook) and through direct sales at the farm on Fridays from 1:00 p.m. to 6:00 p.m. A real treat!
