Les Aurelles is one of Languedoc's finest estates! Since 1995, Basile Saint-Germain and his wife Caroline have been cultivating their 9 ha of vines using organic and biodynamic methods. The vineyard borders the Nizas plateau. Low yields, a determination to market bottles only after very long ageing in enamelled vats: everything contributes to producing some of the finest wines in the Languedoc, polished and slowly mellowed by time.
