Winemaker
In 2010, Jonathan joined forces with his father to create Domaine Jonathan Didier Pabiot. The 20 ha estate obtained organic certification that same year, and biodynamic certification in 2016. The grape varieties are unusual, with 80% Sauvignon Blanc, for his AOC Pouilly-Fumé, and 20% Chasselas, the old variety with which Jonathan produces a confidential high-class AOC Pouilly-sur-Loire cuvée. The wines are slender, mineral and precise. Jonathan and his wife Nina are the very embodiment of the cru's new generation.
