Cheese dairy Opening his own creamery at the age of 26 shows a fine entrepreneurial spirit and solid know-how. The idea germinated on his return from a trip to North America, an opportunity and a very strong desire to defend the terroir. Winner of the 2017 national cheesemakers' competition, which pits candidates against each other on technical tests, he is now a winner with a conquered clientele. A wide variety of cheeses (27-month Comté, fresh goat's cheese with a caviar heart for the holidays, Tome des Bauges AOC, farmhouse Langres...), butter à la motte, farmhouse yoghurts... have opened the doors to a future looking to new pastures.
