Pastry Clotilde is a passionate pastry chef. After honing her skills with Philippe Da Silva at Gorges de Pennafort, she opened her first boutique in the village where she grew up. Home-made, exclusively, from red label or sustainable agriculture products. She makes an excellent pavlova, her specialty, and has teamed up with Dominique Grougi for the bakery side of things, including a gluten-free range based on organic flours.
