Pastry Clotilde is a passionate pastry chef. After honing her skills with Philippe Da Silva at Gorges de Pennafort, she opened her first store in the village where she grew up. Homemade, using only Label Rouge and sustainable agriculture products. She makes fine pastries, including pavlova, which she has made her own. She works in partnership with Dominique Grougi, who has taken charge of the bakery side of the business, developing a gluten-free range of breads based on organic flours. A winning collection.
