A good cheese ripener on the halles, who advertises himself as "a specialist in farmhouse cheeses made from raw milk. On display, you'll find a fine camembert, Basque ewe's tomette, a good range of goats from here and elsewhere (Galet de l'Aveyron, Polochon cendré...), bethmale from the Pyrenees, tomette from Lozère, and blue cheeses including, of course, Roquefort.
