Don't imagine a patisserie overflowing with cakes. The store of the brilliant Claire Heitzler is a counter where you go to pick up the dessert you've ordered. Responsible and virtuous, this is how Claire has imagined the patisserie of tomorrow. She produces only what is necessary, according to the season and the quantities offered by her suppliers. There's no waste, no mess, just top-notch gourmet goodness, including the cherry and chocolate tart (in season), the yuzu friendship cake and the devilishly addictive classic Racine, a combination of chocolate and vanilla.
