Chocolate factory Melt-in-the-mouth ganaches of great finesse, with fresh basil infusion, organic semi-confit lime juice and zest (sublime), sweet-savory praliné with roasted peanut slivers, orange blossom ganache, tea ganache, walnut praliné... A young man in his thirties, trained at Ladurée and La Maison du Chocolat, this son of a dentist shows that value doesn't wait for years. Old-fashioned pralines and "Araguani" ganache seem to be the most appreciated of an excellent collection;
