Michel Bousquet prepares dishes exclusively from South-Western pork, to the delight of his customers: garlic sausage, chestnut pudding, flat or rolled ventrèche and garbure are just some of his specialties. A catering service is also available, with a choice of themes: buffet with friends, gourmet, summer, gastronome or Lavedan buffet. And if you don't come across him in his store at Les Halles, he can only be in his laboratory on rue de l'Hôtel-de-Ville, concocting new recipes.
