Pastry The patisserie has been designed like a jewelry store. Carl Marletti works with clean-cut trends and completely rethought and revamped classics: Lily Valley (purple saint-honoré); Marie-Antoinette (raspberry macaron with rose). He reveals his "pep" touch with Censier (palet praliné-riz soufflé, poppin'candy, the sugar that sparkles, and dark choco quenelle), sliced flavors with Cikara (citrus cookie, caramel and lime) and has made a name for himself thanks to his sense of products, volumes and assemblies of flavors and textures.
