The quality of the products explains the crowds, drawn by hams from prestigious regions: Corsican ham, Noir de Bigorre, Mangalitza raw ham, Bayonne ham… Hay-smoked cooked ham, truffle-stuffed ham, or even Parisian white ham. For hot sandwiches, try the one with Frankfurt sausage and raclette cheese, or “le stras’” with sauerkraut, cheese, and Vienna sausage.
