Fish shop Stéphane Griffet, a young Belgian fishmonger who has set up shop in Alsace after travelling extensively around the world, is well on the way to achieving this milestone. Line-caught fish from the Breton coasts and label salmon appear on the stall as and when they arrive. Fish and shellfish preserves (anchovies from Collioure), in-house delicatessen products (such as filet de lieu pané polenta à la provençale or choucroute de la mer), and even a few vegetables and bottles of wine are on offer from this enthusiast, who will be happy to provide you with a few good recipes.
