It's only natural that the Mandarin Oriental should have a patisserie, next to Thierry Marx's sacrosanct restaurant, and a talented pastry chef. Both young and experienced (he has worked with signatures such as Conticini and Pascal Caffet), Pierre Mathieu, head pastry chef, delights with light, tasty pastries. His signature dessert is the Streusel, an all-chocolate cookie that doesn't overshadow his more than accomplished range.
