Roaster Founded in 1893, Maison Bacquié is now a veritable institution. And while the company has gradually diversified over the years (with a well-stocked delicatessen), it is of course the coffee, roasted on the premises, that personifies the place. Coffee is roasted the old-fashioned way, at 200°C, slowly (around 75 kg in 20 minutes, compared with over 200 kg in 5 minutes with industrial processes). The result, in the cup, is obvious.
