A healthy dose of humor, combined with a sense of volume and balance of curves and colors. Flavors do the rest, with interesting ideas in cacao-ganache caramel-crumble chou, orange blossom-grapefruit sablé... In 2016, Clément Higgins was awarded the trophée pâtissier at the Gault&Millau Tour PACA.
