Pastry Hervé Bremond and his bakers, patissiers and touriers carry out this committed craft on a daily basis, before being sold by a friendly team. "We also pass on our know-how to young recruits. It's a manual profession; it's essential to see the gestures in real-life situations, and then reproduce them," says Hervé, a renowned pastry chef with thirty years' experience in the trade. For taste, the eponymous company processes only quality products: Banette flours, French fruit, PDO butters for viennoiserie in particular.... The Bremond bakery and patisserie has been awarded the title of Excellence by Banette. Flagship products include the Tradition baguette, Gibassier and Navettes de Provence, and, in pastry, Pavlova and Royal. "Even if the compositions are classics, each artisan has his or her own signature. In fact, I can easily distinguish Hervé's," says his partner Roxane Caldamone with a smile. La Maison is also developing its fast-food business, offering daily specials made on the premises, and creating customized entremets and cakes, classic or trendy, for your events.
