Bakery A pastry chef for 20 years, Mickaël Rispe learned the bakery trade with Christophe Vasseur in Paris. He offers a short menu of breads such as the organic hard sourdough tourte de meule. Pan & Gato offers a demanding range of breads, from the most classic to the most elaborate, all made on the premises. Magnificent viennoiseries made with Echiré butter. The croissants are carefully flaky; the original escargot myrtille-citron, and the entremets: fresh changes every day, not forgetting the classics, notably the paris-brest, one of the best in their confrérie. The house is committed.
