Gault&Millau's review
Bakery Thomas Paris, master artisan-baker, (ex-de chez Pierre Gagnaire, a pro) and Grégoire Baron (ex de chez Air Liquide... and a quality-conscious shopkeeper) had a productive meeting that quickly enabled them to reach the upper layers of the atmosphere. Organic or Label Rouge flours, natural sourdough breads and long fermentations result in a masterful range of products, from the crumb to the crust, as well as fine viennoiseries (croissants in particular) and pastries. The Montgolfière vanilla-mascarpone puff pastry is just the thing. Pleasant snacking area, decorated on the theme of hot-air balloons. Young, relaxed atmosphere.
