Clément Vaussion, 4th generation of a family of butchers, focuses on excellence. This starts with the selection of emblematic gourmet breeds such as Limousin beef, Petit Prince du Médoc lamb, Label Rouge Limousin pork and free-range poultry from the Landes. Then it's on to the traditional work of cutting up whole carcasses. In addition, the charcuterie is hand-crafted without colorants or flavor enhancers. Among their treasures: pâtés and sausages. With his teams dedicated to the catering business, he creates tasty ready-made dishes ranging from classic lasagne, traditional French dishes such as veal kidneys, to flavors from around the world: chicken tikka, paella, chicken tajine with preserved lemons, veal stir-fry with curry... "Our suggestions are homemade with meats from the store and vegetables sourced locally. And on Fridays, the spotlight is on fresh fish," says Clément, who also offers refined dishes to punctuate the festive season. In summer, they liven up gourmet markets with their tasty à la plancha dishes!
