A professional couple launched this place in 2014 to promote quality breeds and the meticulous work of the butcher. Originally from Lacaune, Nicole and Jean-Luc Nègre offer Fleur d'Aubrac heifers, Label rouge lamb and veal from the Pyrenees, Label rouge poultry from the Landes, and of course Lacaune ham, which rubs shoulders with pata negra, delicatessen preparations and Betty cheeses, the great Toulouse cheesemaker.
