Butchery Having discovered and observed the world's finest breeds and livestock on site, Jean Denaux is certainly one of our most eminent specialists in meat products. He buys the finest animals on the hoof or as carcasses, then matures, cuts and sells them to butchers all over the world (Hong Kong, Dubai...) as well as to top chefs (Guérard, Troisgros, Marx, Briffart or Robuchon...). Next September, Jean Denaux will be opening a butcher's shop for private customers in Sens (89). This will be an opportunity for them to taste the marvellous meats of Australian wagyu beef chuck (imported fresh by plane), of Japanese stock crossed with Aberdeen Angus (Jean Denaux was the first in France to offer wagyu), exceptionally melting and at a very affordable price (€36 per kilo), or Irish Herford Prime rib steak, with a unique aromatic intensity. Other culinary highlights include Aberdeen Angus beef from Scotland, Meyer black angus from the USA, 100-day saddle fillet of silky, infinitely elegant Quercy lamb, and Limousin "cul noir" parsley, a piece of meat above the loin with a powerful taste and an absolute melt-in-the-mouth texture. These are outstanding qualities for this exceptional pig: slaughtered between 18 and 24 months of age, when it reaches 250 to 300 kg (live weight), the cul noir du Limousin has a fat cover 18 cm thick!
