It was here that José Lopez started out as an apprentice in the 1980s, and it was only natural that he should take over the store when his trainer left some ten years later. Receiving whole carcasses, this enthusiast of fine meats can then cut them into choice cuts. Fleur d'Aubrac beef, free-range farmhouse poultry, Tarn farmhouse pork, horsemeat and fine charcuterie.
