Butchery The beautiful charcuterie department is well worth a visit, as David Barnay spends a lot of time crafting some very fine products: pig's trotters stuffed with sweetbreads, white pudding, sausages, baked sausages... Of course, the butchery side of the business is also of the highest quality. Meat is carefully selected and sold at the right stage of ripeness, Charolais beef proudly displays its Label Rouge, poultry is grass-fed, and calves come from regional farms.
