Butchery Valery Cosse's route starts at 2:30 am at Rungis, twice a week. His job is to know how to choose, negotiate and buy, while keeping prices reasonable. Well-fed animals, fine meat butchered on the spot for a well-organized stall. Blonde d'Aquitaine or Limousin because they have taste, shape and color, calves that aren't too white... the result is there.
