Butchery This old-fashioned butcher's shop is the realm of Serge Grolleau, who works with Bazas beef from the Bazadaise or Blonde d'Aquitaine breeds. Raised between Guyenne and Gascony (IGP since 2008), Bazas beef, matured between 2 and 4 weeks, is distinguished by its exceptional taste. Côté de veau élevé sous la mère (veal side raised on the mother's milk-fed veal), thickly sliced and very tender with short cooking times, gives carnivores a new lease on life.
