Butchery Compagnon du goût, Claude Brouard, rather an intellectual, could have ended up a vegetarian enarque! But that was without his father, who "decided" to have a butcher in the family. Who would complain in Challans, where, since 2004, he has been treating his flock to fine meats and fresh produce. Butcher, charcutier, caterer... and passionate.
