Pastry The Bûchette du Morvan is a nougatine stick coated in dark chocolate, invented by a Morvan man called Pallot. The production process is exclusive to this pastry and remains the house's flagship product. Ludovic Gautheron also offers his own compositions, including ardoises bourguignonnes (Burgundian slates), palets of fruit pulp pastes in colors echoing those of the region's roofs; financier aux amandes (almond financier) and ganache cassis (blackcurrant ganache). Using Morvan hazelnuts in his pralines, the ganaches are full of flavor and softness.
