The authentic taste of traditional charcuterie. Like caillette made from pig's liver, throat or belly with chard and spinach... head cheese with carrots, pâté en croûte with trumpets of death or fricassee of offal with black pudding... All these dishes are made from free-range pigs raised in the open air or on straw, but always fed on cereals. You can also find this Cochon-ci at the La Rochette and Aime markets.
