Pastry A pastry chef who has forged a fine reputation for himself as a conscientious and imaginative craftsman who excels in both imposed exercises and creative creations. Try his Versaillais, praline hazelnut cookie dark chocolate mousse, his forêt-noire, his lemon tartlet or his very gourmet "éclat noir intense" and the whole range of chocolates.
