Because Corsica is above all a land of history and passion, Ilda and Cosima learned their trade as shepherds in the middle of the maquis, and have never spared their efforts. Most of the year is devoted to milking and making cheeses of varying degrees of ripeness, including fresh brocciu in spring, which are then sold on the farm and in some local shops in high season.
