Winner of the first Coupe du Monde de Pâtisserie in 1989 and MOF Glacier in 1994, Thierry Froissard is a hit at the foot of the Samoëns ski resort's peaks, with his coupes and entremets glacés, like this one featuring a pear-orange-cinnamon sorbet on a dacquoise, topped with a walnut parfait, caramel ice cream and candied carrots.
