Snail lovers had been at a loss ever since the Ferme Hélicicole de l’Avesnois in Croix-Caluyau closed. Fortunately, they have something to smile about again thanks to David Waignier, who has set up shop east of Avesnes-sur-Helpe. A native of the Avesnois region and after a career in the luxury hotel industry, David returned to his hometown to start a snail farm with 100,000 snails, which enthusiasts enjoy Burgundy-style, as croquettes with Maroilles cheese, or with old-fashioned mustard.
