Christian Fontès is a third-generation artisan butcher. Passionate about the typical cuisine of the Hers valley, he doesn't hesitate to gather testimonials from grandmothers to revive simple, ancestral recipes from the Ariège region, following the rhythm of the seasons. He also offers a wide range of regional products on his online boutique (canned cassoulet, blanquette, lentils, tripe, etc.). All his charcuterie is made from top-quality local pork (or Galavard du Terrefort pork).
