Touraine is a rich terroir that Philippe Derre showcases in a range of flavorsome preparations. The terrines reflect this richness, with Touraine pink king pork, truffles, pear tapée (as a dried fruit) and saffron, which has been present in the region since the return from the Crusades. Traditional terrines of rillettes, poultry livers, foie gras/raisins, truffles or black pudding/apples tapée, will garnish beautiful toasts that the kings of the valley wouldn't refuse.
