Crisp bubbles and the creamy mousse texture the savoury palate, seasoned slightly with salt and pepper. More gastronomic than gourmet, crunchy watermelon tannins and a slice of lemon piercing through the open end, with lingering savoury spiced fruits, herbal tincture and tonic lime bitters.
