The nose opens with notes of honey, white flowers, peach, chalk, laurel and cumin, with hints of pear and apple. The palate offers a fresh, juicy, gourmet attack, supported by well-integrated bubbles. Its creamy, full-bodied texture is matched by power, balancing dosage, tension and bitters. The pure, persistent finish reveals citrus fruits and a hint of saltiness. This wine is an ideal accompaniment to tuna tataki.

Leclaire-Thiefaine

Leclaire was founded in 1878. In 1991, Reynald Leclaire, from the fifth generation, married Virginie Thiefaine and renamed the house with both their names. Constantin, representing the sixth generation, returned to the domaine in 2020. Based in Avize, he cultivates 4 ha of vines, giving pride of place to Chardonnay, the flagship grape variety of the Côte des Blancs. Each cuvée is aged in the cellar for at least four years, for a total of six numbered cuvées sold in limited quantities.
