Like a soothing bath for the eyes and palate, if not the soul, Sushi Shunei offers an experience rather than a meal. One could rave as much about the striations on a hand-crafted ceramic bowl, carefully chosen by each guest, as about the respect for the fiber of each fish... An exquisite moment, too rare and too short, from which one hopes for a lasting memory. That of the exceptional medium-fat tuna, the tasty yellowtail and delicate octopus, the very good lobster tosazu and caviar and the excellent fried sea bream. The nigiri are exceptional, thanks to their temperature, the quantity and the chewiness of the rice chosen, and the barely intelligible explanations, with an accent to cut with a ceramic knife, and a special mention for the sea bass, mackerel, tuna and especially the eel. Ducasse sorbets, serious but unsurprising wine list, tea pairing suggested.
