This house, well known to the Bordelais, yet far from the city center, continues to delight us with its graphic cuisine that reveals a real personality. Victor Ostronzec develops a coherent culinary language: cod confit with kiwi and ginger, Blaye asparagus with tangy rhubarb, morels stuffed with tamarind. The technical execution remains impeccable, particularly on the red tuna treated like a pepper steak, the real master stroke of the meal. The precisely orchestrated service is a natural accompaniment to this seven-course menu. The chef's poetic intent is expressed through the use of local and seasonal produce, creating unexpected but technically justified combinations. The wine list intelligently structures the pairings and favors relevance over exhaustiveness, accurately reflecting the great French regions. The dessert course confirms technical mastery: the Guayaquil chocolate, raw and deep, reveals a true taste of cocoa with a balanced almond praline.
