Gault&Millau's review2025
Owned by the Chauvin family since 1949, this hotel institution on the shores of Lac Saint-Point offers a rather bourgeois and refined experience, set against a backdrop of lakeside scenery. Comprising three hotels and three restaurants, the complex boasts a wide range of services and comforts, and presents here the elegant version of its tables, with lake views and Louis XVI furniture. The chef defends an interesting market cuisine, showing off snacked shrimps with pickles, salmon tournedos with bacon and a bed of sauerkraut, the classic chicken supreme with Savagnin, the sweet glaze with bergamot infusion and prune compote. Well-informed cellar.
