The cuisine is as creative as it is easy to understand, and Montpellier's residents are clearly enthusiastic about the work of Laurent Cherchi, who succeeds in making gluten-free gourmet and seducing with a simple endive and apple salad. In this lively, discreetly chic dining room, everyone plays their part: Damien, well invested, a new sommelier with a solid background, and a whole team dedicated to the collective success. On the plate, advanced technique and fine flavors: the famous endive with Vergèze cider vinaigrette and chantecler apple, an organic free-range egg emulsion with raclette cheese, Forte's free-range poultry with salsify and miso prune, a superb dish with very precise cooking, ending with the organic almond dessert, in the form of mousse, cream and praline. Three toques this year.
