Satoshi Horiuchi's hidden works of art remain a source of mystery for a clientele eager for surprises. The setting is meticulous, as is the service, with an affectation one might think reserved for the grand houses. Three or five stages at lunchtime, seven in the evening for €145, a large cellar with classics and moderns.
