Sponsored After honing his skills in some of Paris's finest addresses, as well as in bistros serving market cuisine, Chef Naïm Chhiba joined the magnificent Gaogaia estate, an 18th-century bastide set in an enchanting setting in the Aix countryside, north of Marseille. Here, he creates inspired, convivial cuisine, with surprising pairings. Aveyron pork chop baked over an open fire is sublimated by a beurre blanc with wakame. "We select the animals directly from the breeders," say Martin and Robinson Roy, two brothers associated in the business with their father, Etienne Roy. The latter works mainly in the hotel***, which offers beautiful rooms decorated in Provençal style. The Roy family has expanded its offering in the Pays d'Aix region with the opening of a bistronomic restaurant in tribute to their grandfather, nicknamed Opère. This restaurant follows the same values: eco-responsible, respectful of seasonality, epicurean and gourmet.
