Gault&Millau's review 2026

A good ethical and environmental approach, one that favors seasonal vegetables to promote regional producers, but also one that makes us eat the famous invasive blue crab (here in ravioli) that devours the fauna of our coasts. Add the côte de cochon du Ventoux, the encalat du Larzac and the "brioche régressive" to get the best possible overview of this endearing table.
