In the heart of the Cévennes foothills, in Quissac, Léa and Elouan welcome you with a smile. Behind the boldness and youthfulness, this is a restaurant with a remarkable maturity. The menu, renewed every month, features fresh, local produce that Elouan tames to perfection, offering dishes that are both masterful and gourmet. From his signature dish, the pâté en croûte (well worth the detour), to the Idukki chocolate dessert, which goes wonderfully well with an excellent parsley bergamot sorbet, to the Cévennes sweet onion cooked in apple juice, accompanied by hazelnut butter croutons and a superb reduced onion juice, or the Cévennes baron ; pork roasted in a sauté pan, Jerusalem artichoke purée and Jerusalem artichoke confit, with a butcher's sauce in pig juice to bind it all together.. The cellar is coherent and rather accessible, still in development.
