This is one of Mont-de-Marsan's not-to-be-missed restaurants, proudly run by Christophe Dupouy for over fifteen years. The chef loves challenges and contrasts, offering an elaborate tasting menu featuring XXL white asparagus and blood orange, rock fish concentrate, ikejimé red tuna, orzo and zucchini, duck foie gras broth infused with hora, or wood-grilled beef fillet, burnt shiitake, celery and a hint of Tibetan smoked curry. Very fine cellar.
