Chef's Restaurant Consistency on the plate and a setting that never gets old. Managed by the couple Elisabeth and Christophe Hagnerelle, Val d'Auge sees its chef serving his dishes in the dining room and its hostess offering a carefully-crafted wine list, and the regulars are always there. Between the discovery menus and the timeless à la carte dishes, such as sweetbread escalope or exceptional beef, mastery is combined with simplicity to offer pretty plates such as langoustines, mackerel fillets and oxalis ice cream, or this paillard of beef fillet and crunchy vegetables. Iced nougat and miso-lacquered pear round off a pleasant moment.
