Local in intent, but open to all with a definite modernity, this bistro opens up some lovely perspectives on today's cuisine. The young team is full of ideas and shows them off in this sober interior, with its pleasant green and white parquet flooring. On the slate, a great deal of work has gone into the presentations and combinations: grilled octopus with parsley and creamy cauliflower, rougail with Ouessant sausage, rice pilaf with Roscoff onions or the "Rosko bowl" of the day with sesame-marinated tuna, fromage frais with onion and ginger soy sauce. A wild cellar, with a few new-wave players, particularly in the Loire.
