Some brands come and go, others stay. We salute Julien Chazal's regularity, who discreetly and efficiently does the job. With his classic, common-sense cooking based on seasonal and market produce, he offers formulas that vary according to the number of courses (three courses in the €55 price range): foie gras and onion soup, veal picanha with peanut pak choï noodles, Jerusalem artichokes with hazelnut and lemon praline, a well-balanced sequence that reveals true savoir-faire. Lunch menu €25.
