A fine bistronomic restaurant overlooking the square, this is one of the city's best-loved addresses, and for good reason: a meticulous setting that's both sober and contemporary, without lapsing into minimalism, and a contemporary menu that respects the seasons and the market. The dishes show a slight touch of research, demonstrating a certain personality and imbuing the terroir with an attractive modernity: salmon gravelax with dill, beet crumble and vegetable pickles, redfish fillet in a fresh herb crust with sauce vierge, beef fillet with shallot confit and oyster mushrooms, or an iced soufflé with bergamot and pink pralines.
