The dining experience at the Hyatt Paris Madeleine is in good hands, and Café M is also a go-to spot for business lunches in the neighborhood. The menu features seasonal and even vintage dishes—neither too complicated nor too simplistic—served with care in a setting that combines chic elegance with great comfort: tuna sashimi with passion fruit “leche de tigre,” fennel, and radishes; confit lamb shoulder with chickpeas, piquillo peppers, and spiced jus; cherry clafoutis with roasted almond ice cream. A classic wine cellar, with about fifteen wines available by the glass.
